Reclaiming fruit trees

This is our existing pear tree.  I have no idea what type, but would suspect it's a Bartlett.  When we bought the property, it was completely shaded out by pine trees, and covered in poison ivy and other vines.  We spent a fair amount of time thinning out the interior tree growth, dead limbs, and doing a general winter pruning.  There is a lot of healthy growth on the tree.  This summer probably won't see  significantly improved fruit production (this summer there were a few small pears despite the heavy shade), but next summer could see a much better harvest after a summer in the sun.  With the summer pruning, I'll make the first of three years' worth of cuts to reduce the overall height to something more manageable.  Compost and mulching will probably help significantly.

This is the apple tree.  Based on the one or two small fruits, I'm guessing it is a Gala.  The apple that I tasted was delicious - sweet and a perfect texture.  Unfortunately, this tree was almost completely in the shade of pine trees as well.  It had more dead branches than the pear tree, but it also has a lot of healthy new growth.   Compost and mulching will probably help this tree significantly as well.
